Oleuropein is made from olive leaves through solvent extraction and purification. Oleuropein is a glycosylated seco-iridoid, soluble in water, ethanol, acetone, butanol, ethyl acetate, hardly soluble in diethyl ether, petroleum ether, chloroform and so on. Oleuropein is unstable in air and sunlight, and it should be sealed in dark place.
